Trim Healthy Pancakes – my husband loves these!

Updated with video. Note, I gained a little weight after having my baby, so I’m not the down 26 + pounds I was when I wrote this post. Yoga challenge for 2017 just begun though!

I have lost 26+ pounds by following a simple healthy fats medium carbs low sugar lifestyle. Instead of going into detail about the kind of diet I follow, I’m just going to share with you the yummiest recipes I come across (for now – story later).

My first experiment with Trim Healthy recipes (a new one for me from the book Trim Healthy Mama) was a success. Nate and I loved these yummy healthy fat, medium carb pancakes made with 3 simple ingredients. Score for me! It’s a great victory for me and my diet-overhaul endeavors that Nate was genuinely impressed with these.

Since these pancakes are focused on a healthy medium carb level, the fat is limited.

1 Cup Old Fashioned Oats (Wegmans)

1 Cup Low Fat Cottage Cheese (Wegmans 2%)

1 Cup Egg Whites (I bought them in a carton so as not to waste the yolks)

2 tsp baking powder

3 tsp Truvia or Xylitol (no carb healthy sweetener -optional.)

dash of vanilla

Blend the Oats (make sure you are using whole oats not quick oats, which cause more insulin production in your system.

Then throw everything else in and blend well.

This thick creamy mixture fries amazingly well into puffy golden pancakes. Fry in the slightest bit of butter. Top with Greek Yogurt (1% or 2%, for these meal don’t use whole yogurt as the carbs and fat will have a hard time burning off together – though lots of yummy recipes coming up soon that allow whole yogurt). Also add blueberries and a drizzle of Stevia-sweetened or Sugar Free Syrup. You’ll never miss the butter!

  1. Hmmm I first heard about healthy pancakes through a fitness channel some years back but back then I couldn’t even master crepes. Now I can make those, but pancakes still fail for me! It’s a mystery how you get them to look so be-auuuuutiful!!!! o_o You kitchen princess. I want to be able to do that!! Maybe it’s an american thing. In your genes. ;D

    1. Honestly my pancakes never turn out yummy and fluffy. I’m not a good cook. So I was surprised that this healthy recipe was so great. Now I try to keep these in the fridge because with their high protein they are a LIFESAVER for a hypoglycemic (like me). 2/3 protein and 1/3 really healthy whole carbs.
